Dinner tonight

I cooked up a storm tonight-I made hummus (not pictured, but I used the recipe from the original Moosewood Cookbook), cabbage and chickpea soup to eat tomorrow night, and spaghetti with wheatballs, courtesy of the Candle 79 cookbook.

To Watch or Not to Watch?

Not for the faint of heart….

There have been a lot of documentaries made recently about food and not all of them are great!  But Super Size Me  (2004) was the first to open up our eyes about nutrition.  Vegucated (2010) is also another awesome documentary. The part on factory farming alone will make you never want to eat meat again!  Food, Inc. (2008), Food Matters (2008), Forks Over Knives (2011), and Fat, Sick, and Nearly Dead (2010) are some other interesting films.

Where it all began….

The book that really started us on this journey is The Kind Diet  by Alicia Silverstone. It’s filled with so much important information for those who want to improve their diet and/or for those who no longer wish to eat animal products. We also recommend the following books-

• Veganist  by Kathy Freston
• The Skinny Bitch series by Rory Freedman and Kim Barnouin
• Chloe’s Kitchen by Chloe Coscarelli.

Impossible to ignore!

Of all the books out there The China Study by Dr. T Colin Campbell is the most scientific and very educating. Packed with information and details about clinical studies, the evidence is overwhelming. Eating a Western Diet we will live, but for sure we will NEVER thrive! We will not recover from illnesses without drug intervention. We firmly believe that prevention is indeed better than cure! Eat your way to health is the way we wanna raise our kids. This is the single most valuable gift we as mothers can give our families. We have an opportunity several times a day every day to add to the value of the rest of their lives and ours. Let’s step up to the plate and put some good stuff on it!

👠 -Healthy Chocolate Milk

Healthy Chocolate Milk

Ingredients

  • 4 Cups of Almond Milk or any other Nut/Rice Milk
  • 2-3 Tablespoons Cacao Powder
  • 2-6 Pitted Dates depending on how sweet you like it!
  • ± 1½ Teaspoons of Xanthan Gum (Thickener)
  • Garnish of your choice

Preparation

Add all ingredients to Blender. High-Powered Blenders like Vitamix
blends  super fast and smooth in no time! Blend until smooth. I added
some thinly sliced Banana and Sprinkled Cinnamon for presentation.
Let loose your creativity!
Refrigerate and serve.

👠 -Almond Milk

Ingredients

  • 1 cup Raw Almonds
  • Water for soaking Almonds
  • 3-5 cups Water depending on how white you like your milk!
  • 2 Dates (optional)
  • 1/2 tsp Vanilla (optional)

Preparation

Soak the Almonds in water overnight or for at least 6 hours. Drain the water from the almonds and discard. Blend the 3 cups of Water, Almonds and Dates until well blended and almost smooth. Strain the blended Almond mixture using a Nut Milk Bag. Homemade Almond Milk will keep well in the refrigerator for three or four days.

Welcome, forveggiesake!

This is a blog created by two Gals. Well, 2 Moms, to be a bit more descriptive. Turns out, they are right.  When you become a Mom, things change! Duh!  No, REALLY! Almost everything changes. One of the things that changed for us, is the way we thought about food. It changed in a big way.  We became VEGAN. So now we are officially part of the weird crowd and proudly so! You can read all kindsa stuff here. As soon as we get the hang of all of it, that is!
